Preserving Summer's Harvest

Don't tell my mother I said this but, I wish we had a garden.  There are so many seasonal veggies that my family loves to prepare and eat, but the cost in the supermarket can be a bit steep for our pocketbooks.

Many of my friends have vegetable gardens this summer in an effort to stretch their tight grocery budgets and I've been able to barter some of my coupon shopping bargains for fresh produce.  That's a win-win for both families.

Last summer we came home from a family shopping trip to find 10+ watermelons plopped at our front door.  We love watermelon as a sweet, juicy, low-fat treat.  I am eternally grateful for someone thinking of us and being so kind, but there is just no way we can eat that much before they ruin.  

My husband is always up for a challenge and begin to look for ways to preserve our bounty.  One of the recipes he found was for Watermelon Rind Preserves.
